My
small family firm produce Soave wine. We have 6,50 Hectares and 5 of these Hectares are in Monteforte D’Alpone. Monteforte has got an Italian wines giness: on 1900 HT of ground, 1700 HT are utilized for vineyards. Monteforte is historic heart of the naming Soave. Our vineyards are cultivated Garganega grape (100% only Garganega) with Historic plant called “ Pergola Veronese” and we use particular technique to obtain more possible results from grape. Soave
Classico Doc ( hill wine) “Doppia Maturazione Ragionata dell’uva”
means: 15/20 days before grape harvest, we prune the vine shoots and we
leave to dry up the grapes in the vineyards. After we press it and in
this way there’s an increase of sugar gradation and a low acid contents.
After pressing we leave wine in a steel cask. We refill only one time
from cask to cask and we leave in the second cask for a year to ripeness
and we put in the bottle. Soave is a lively, elegant
wine with a good acidity. It’s a dry wine, the colour is pale straw
with green reflexions,slightly fruity , fresh taste , a delicate perfume
recalling elder cherry blossom, delicate sour. It’s excellent with
meat and fish , never iced and it has 12°. |

Classsico DOCG This is the highest certification
regards Italian wine law. |
Camaole IGT Rosso Veneto It’s a mixture of 70% Cabernet Saovignon, 15%
Sangiovese, 15% Rondinella. Also for this kind of wine, the harvest
is by hand and the grape put int the cases for drying 2 – 3 months.
The winemaking is in Tonneaux of 5HL and ripening 1 year in these tuns. |
